

Thanks to the rise of the celebrity chef most people now understand that it’s important for meat to be well hung. Ours hangs for around 21 days which is about the perfect length of time for the breeds we use.
As much as 2 kg of weight per day is lost during this time which is why many of the supermarkets choose to bypass a lengthy hanging process.
Ironically, the drier the meat is after it has been hung the more succulent it will be! It should also lose little or no weight during cooking which means better value for you.
